It is made by esterification of glycerin with citric acid and edible fatty acids.
It is obtained by reacting mono- and di-glycerides of edible fatty acids with citric acid.
It is obtained by reacting citric acid anhydride with mono-diglyceride. The finished product can be neutralized in whole or in part by NaOH or KOH.
