Citric acid esters has antioxidant properties for fats and oils products, and the higher the degree of esterification, the better the oxidation resistance. During the refining and deodorization process, the oils products could carry a trace of metal ions, which will cause rancidity of the oils products and cause odor, which is not conducive to storage and transportation. This requires the addition of a metal ion chelating agent to passivate the metal ions to reduce the effect on the oils products. At present, most of the oils producers use the citric acid fatty acid esters , to added to the fats and oils products.
Citric acid ester, which is an esterification product of citric acid and monoglyceride, has good dissolving ability in oil and fat, can be added with grease under high temperature conditions, does not produce other degradation products, and can also be well complexed metal ions in fats and oils products, play an antioxidant role.
